On the first floor of a building in popular Dong Khoi Street, the kitchens of L'Usine are in full swing in a former workshop.

L'Usine is a real discovery. We must first take a walkway between two shops, climb to the first floor by the stairs at the end of this alley lined with stalls and motorcycles, and walk along a tiled corridor of black and white that opens onto a courtyard of pure colonial style. Here, in this old workshop behind the large glass swing doors, is a lively cafeteria of a new genre in Ho Chi Minh City.

The authenticity of the place is not just in its industrial style, marble tables, and steel chairs, which seem an obvious choice in the context. It is also found on your plate. From breakfast, which is served all day, through dinner, offering duck à l'orange and baked potatoes, salmon croquettes in a garlic and spices sauce, or even ratatouille with cabbage and melted pecorino cheese, the menu offers fresh, inspired Vietnamese cuisine, prepared on site by expert hands. The chef's surprise? A concept store behind shutters with a selection of well-chosen accessories.
